Studies suggest that roughly 90% of cinnamon sold in the United States is cassia, not Ceylon. That's not surprising; cassia is cheaper to produce, grows abundantly in Vietnam, China, and Indonesia, and has the bold, assertive flavor most people expect from the spice. But it also contains substantially more of a compound called coumarin, and that's where the label gap becomes important for anyone supplementing daily.
Coumarin: What It Is and Why Daily Dose Changes Everything

A 2,000 mg daily dose of a cassia-based supplement could theoretically deliver 4 to 24 mg of coumarin. A 7,200 mg daily dose of Ceylon contains a fraction of that. The plant source is doing all the work here, not the serving size on the front of the bottle.
The Chemistry That Actually Separates Ceylon from Cassia
Beyond coumarin, Ceylon and cassia have genuinely different chemical profiles worth understanding.
Ceylon cinnamon is harvested from the inner bark of Cinnamomum verum trees cultivated primarily in Sri Lanka, the island formerly known as Ceylon. Workers hand-roll the thin inner bark into delicate, papery, multi-layered quills. The flavor is lighter and more complex than cassia's, slightly sweet with none of the sharp heat.
Both varieties contain cinnamaldehyde as a primary active compound. This is the molecule most associated with cinnamon's characteristic aroma and bioactive properties. Ceylon essential oil typically runs 55 to 75% cinnamaldehyde; cassia runs higher, sometimes 80 to 95%, which partly accounts for its more pungent, sharper flavor. Both also contain proanthocyanidins, polyphenols associated with antioxidant activity in the body.
Where they diverge sharply is on coumarin, as described above, and on several minor alkaloids whose presence and ratios differ meaningfully by species. None of this is visible from a label that simply reads "cinnamon extract, 1,000 mg."
Researchers can distinguish the two species using high-performance liquid chromatography based on their chemical fingerprints. A peer-reviewed toxicological assessment of coumarin confirmed that coumarin concentration alone reliably differentiates Ceylon from cassia in commercial samples. You should be able to tell the same thing from a supplement label. Often, you can't.
How to Actually Read a Cinnamon Supplement Label
Customers often ask us what actually matters when evaluating a cinnamon supplement. Here's the short version:
- Latin name first. Cinnamomum verum or C. zeylanicum means Ceylon. Any other species name, or no species name at all, almost certainly indicates cassia or a cassia-family variety like C. aromaticum or C. loureirii.
- Plant part. Bark is the traditional source. Bark extract concentrates specific compounds and should specify what it's standardized to and at what percentage. Whole bark powder is more variable batch to batch.

- Standardization disclosure. "Standardized to X% cinnamaldehyde" tells you something concrete about what you're getting. A label that doesn't standardize to anything makes consistency harder to verify.
- Delivery system. Cinnamaldehyde is fat-soluble. Whether the formula uses an oil-based carrier or a dry powder capsule affects how efficiently those actives are absorbed.
A label that says "cinnamon bark, 2,000 mg" with no species name isn't technically lying. It's just leaving out the part that changes the entire calculation for daily, long-term use.
