Ceylon vs Cassia: Why the Type of Cinnamon Matters

Ceylon and Cassia cinnamon look alike but differ dramatically in coumarin content. Learn why the type you choose matters for your daily supplement routine.

Ceylon and Cassia are both sold as cinnamon, but they come from different trees with very different chemical profiles. The key distinction is coumarin content: Cassia contains up to 700 times more of this compound than Ceylon. For occasional cooking, that gap barely matters. For a daily supplement, it changes the equation entirely.

Two Plants, One Name

Walk into any grocery store and you'll find cinnamon on the shelf. Usually one kind. No variety listed, no origin noted. But the cinnamon in that little red jar is almost certainly Cinnamomum cassia, not Cinnamomum verum, the tree that produces what's called true cinnamon, or Ceylon cinnamon.

This isn't a minor botanical footnote. These are two distinct plants with meaningfully different chemical compositions. Both taste like cinnamon because they share a key aromatic compound, cinnamaldehyde. That's roughly where the similarity ends.

Ceylon comes primarily from Sri Lanka, historically called Ceylon. Cassia grows in China, Indonesia, Vietnam, and across Southeast Asia. Cassia produces thicker, harder sticks. Ceylon rolls into tight, papery quills that flake apart between your fingers. Cassia dominates global spice trade because it's less expensive and easier to grow at scale. Most of what's sold in North America is Cassia, often without that fact appearing anywhere on the label.

Coumarin: The Number You Should Know

Here's the difference that matters for daily use: coumarin.

Coumarin is a naturally occurring compound found in many plants. In Cassia cinnamon, it's present in significant concentrations, typically between 1 and 12 milligrams per gram of dried spice, depending on the variety and origin. Vietnamese Cassia (Cinnamomum loureirii) runs particularly high. Chinese Cassia (Cinnamomum aromaticum) is somewhat lower, though still in an entirely different category than Ceylon.

Ceylon cinnamon contains roughly 0.017 milligrams of coumarin per gram. That's not a slight difference. It's a gap of 50 to 700 times, depending on which Cassia variety you're comparing against.

The European Food Safety Authority has established a tolerable daily intake for coumarin at 0.1 mg per kilogram of body weight. For a 70 kg adult, that's 7 mg per day. A single teaspoon of ground Cassia can contain 5 to 12 mg on its own. Sprinkled on oatmeal occasionally, the cumulative exposure is trivial. Taken as a concentrated supplement every morning without fail, the math changes substantially.

Ceylon's Chemical Profile, Beyond Coumarin

Low coumarin content is only part of what makes Ceylon worth selecting. The two varieties also differ in cinnamaldehyde concentration and polyphenol composition.

Cassia tends to run higher in cinnamaldehyde, giving it a more intense, slightly harsh flavor. Ceylon is more nuanced: subtle sweetness, light floral notes, none of that sharp medicinal bite. In cooking, some people actively prefer the boldness of Cassia. In a supplement, you're not optimizing for flavor intensity.

Ceylon also contains type-A polymeric proanthocyanidins, polyphenolic compounds studied for their potential role in supporting healthy metabolic function. Cassia has similar compounds, but the overall polyphenol profile diverges enough that extracts from each variety aren't considered interchangeable in research settings.

Ceylon bark is physically thinner and more delicate than Cassia. It forms in tight inner layers you can peel apart like parchment. That physical difference reflects genuine botanical differences between the two trees, not just a trade distinction or a marketing category. When sourcing Ceylon for a formula, the species declaration alone isn't enough: verification through third-party testing confirms you're actually getting what's promised.

The Spice-to-Supplement Gap

A pinch of Cassia on your apple crumble is not the same as 1,500 mg of Cassia extract taken every morning. That methodological gap is actually one of the more important limitations in this research area. When variety is unspecified, it's usually Cassia, because it's far more widely available. Trials explicitly designed around Ceylon for extended durations tend to appear in contexts where minimizing coumarin exposure was part of the ethical design of the study.
